raw is hard.

You know, at one point I was completely agro about going to the raw food diet, but then I fell off the wagon...hard. (Oh,  The pain! ) Now, after having managed to climb partially on,
and really clinging...it's-a-real-nice! 
Typical day is; copious amounts of coffee, black, accompanied by a green smoothie, (my current favorite is water, frozen banana, and curly or flat parsley,) salad for lunch and fruit, or nuts for snacks. more coffee...relax, I'm only human...it's my last crutch. 
Dinner can go one of three ways:
  1. OFF THE HOOK!!! Quite possibly my favorite. This is where I remain a vegetarian, and that's about it...veggie lasagna...boom!
  2. MY MAN IS HOME! This means I cook more than one thing for dinner.... a typical dinner: big salad, some roasted vegetables, and maybe some beans or a grain. And this is NOT boring plain beans or grains. There could be curry involved, raisins and apples, there could be a spinach lentil soup...who knows...it's delicious.
  3. IT'S LOW-KEY: we're talking a veggie tray here, or a pot of brown rice, pasta, quick veggie soup, quinoia, bean soup, toast, I don't care...whatever it is it's EASY!!! These are reserved for school nights...so this semester we're looking at 2 nights a week...me likey!
I will start posting these low-key, easy recipes...most of them are tried and true delicious vegan dinners. Now that I can do photos, it's super fun!
