heirloom tomato recipes

Super easy homemade tomato sauce! All it requires is a hot water bath...it's as easy as making jam!
Adding homemade canned goods to your pantry is a great way to eliminate additives into your diet. Store bought tomato sauce has
several ingredients that you may be trying to avoid, or should be avoiding: sugar, calcium chloride, citric acid, sodium, and not to mention the fact that cans are lined with a plastic that actually gets into the food that has been processed in that can. Scientists have proved that there is plastic in our blood. Canning tomatoes yourself, in glass, is one way to lower your exposure...

This year my best friend and I grew a few different kinds of tomatoes, OUTSIDE! (I was so excited about this because I grew up in Kodiak Alaska!) Together we made enough tomato sauce to last our families the winter! We followed the recipe in the Ball canning book for basil garlic tomato sauce... It turned out both gorgeous, and delicious, and was quite easy to make. Heres the link to the recipe that we used!  http://www.freshpreserving.com/recipe.aspx?r=45
This sauce is so versatile, you can use it for pizza, pasta, soups, and who doesn't like huevos rancheros for dinner? Just add cumin, chili, cilantro, and it's perfect for any mexican style dish!

There is also a plethora of green tomatoes going on in our yard. I remembered eating spicy pickled green tomatoes at roadside stands in Georgia, and decided to give it a try. I haven't opened a jar yet, but they're gorgeous, and I can't wait to try one!
